Peel, half and core 6 pears and poach in a simmering pan of apple juice. Blitz 250g of sugar and 250g of cubed butter. When smooth add to a bowl of 250g of almond powder, 2 large eggs, a large hand full of bashed walnuts and the rind of one lemon. Spoon into a blind baked pastry case and add the pears. Cook for about an hour until brown on top.
