Christmas Cauliflower and Nutmeg Soup

Chop 2 large red onions and 2 medium potatoes.  Fry until soft in a good glug of oil seasoned with salt and pepper.  Pour in 2litres of water, 100g of red lentils and 6 whole peeled cloves of garlic.  When the water is boiling add 1 large roughly chopped Cauliflower and a few handfuls of spinach.  Cook until the Cauliflower is soft then take off the heat, add creme fraiche and 1 grated nutmeg.  Blitz.
