Lucy’s Lazy Lonesome Purple Cabbage

Chop one red onion and fry with fennel seeds, salt, pepper and a good glug of olive oil.  Add two peeled chopped apples and half a finely chopped purple cabbage when the onions are slightly brown.  Pour in 150ml of Vinaigre Balsamique and cook on a low heat until soft and sticky (about 30 minutes).

Mr Hope left for Sweden today… for two weeks!!  I think I shall have to re-name this blog ‘How-to-keep-Lucy-sane-while-living-at-800-metres-without-a-car’.  I have quite a sizeable list of things to achieve while he’s away so hopefully the time will fly by.  For now I’m settling in with Sumo, Front Row on Radio 4 and some comfort food.  Below – Baked Bananas with Chocolate and Creme Fraiche.
