Chop one red onion and fry with fennel seeds, salt, pepper and a good glug of olive oil. Add two peeled chopped apples and half a finely chopped purple cabbage when the onions are slightly brown. Pour in 150ml of Vinaigre Balsamique and cook on a low heat until soft and sticky (about 30 minutes).
