Rhubarb and Ginger Crumble

I’m in serious need of something warm and sweet!  Having been working outside all day in howling winds and light drizzle I think Mr Hope and I definitely deserve a proper old-school pudding…  and the ultimate comfort food has got to be crumble.  This is a really easy Jamie Oliver recipe I’ve tweeked to my zesty tastes.  Roughly chop 1kg of Rhubarb and place in a pan of water with a large spoonful of honey, the juice of one large orange and a few chunky pieces of crushed ginger.  Bring to the boil and simmer for five minutes.  When cooked place in ovenproof dish with two roughly chopped apples.

For the crumble topping rub 100g of flour and 100g of butter together until bread crumb consistency.  Add in 100g of brown sugar, the zest of one orange and a large knob of grated ginger.  Sprinkle on top of the fruit and bake at 180 degrees for 35 – 35 minutes or until brown and bubbly.
