Dan came up with this awesome pudding as a lighter (?ish) alternative to our favourite Tiramisu. I’m not sure how much healthier our version is but I guess a little of what you fancy does you good! The recipe below serves 15 and is always a hit when we make it for guests.
Mix 150cl of Creme Fraiche with four packets of crushed Macaroons. Spoon a thick layer over the base of a large dish. Next add a layer of fruit – berries are the best, I use a mixture of blueberries, raspberries and blackberries. Spread a final layer of the Creme Fraiche mixture on top and add a generous sprinkling of grated dark chocolate. Put in the fridge for at least two hours.
